LINGUINI w/ smashed peas, sausage, and Ricotta Cheese

1 lb. Linguini 1 Cup Whole Ricotta1 bunch fresh basil leaves (chopped)1/4 cup fresh grated Pecorino Cheese1 teaspoon salt2 T. olive oil2 cloves garlic1 1/4 pound Italian Sausage2 cups frozen peas
Bring a large pot of salted water to a boil and cook pasta till firm to the bite, stiring occationally, about 8-9 minutes, drain and reserve 2 cups of water.
Meanwhile in a deep skillet heat oil and garlic over medium-high heat and add the sausage breaking it up with a wooden spoon. When sausage has browned, about 5 minutes. Remove and set aside. Add the peas to the pan and using the back of a wooden spoon, smash the peas. Turn off heat. Add ricotta to the peas along with the cooked pasta and toss to coat, adding the pasta cooking water 1/4 cup at a time, if needed to keep the pasta moist. Return sausage to the pan, add the chopped basil and pecorino cheese. Toss gently and serve!
