Fancy Cuban Panini (vegetarian)

Ingredients
2 slices light whole-wheat bread1 tbsp fat free mayo (I use homemade Happy Herbivore)1 tbsp lower sodium dijon mustard1/2 tbsp cranberry saucenusalt and pepper to tasteitalian seasoning1 slice fat free swiss cheese1 slice lightlife vegan ham1 slice lightlife vegan turkey1 dill pickle slice
Directions
**Warning: this sandwich is high sodium, and so should be eaten in moderation.**
Combine cranberry sauce, mayo, dijon, salt and pepper in a small dish with a whisk and spread evenly over 2 slices of bread. Sprinkle with italian seasoning. Top with ham, then cheese, pickle, and turkey, followed by other bread slice.
Cook in preheated panini grill (on medium-high heat, around 375F) for 6-7 minutes or until melty and crispy. Alternatively, pan-cook in a skillet sprayed with nonstick spray over medium high heat for about 1-2 minutes per side.
