Ingredients
cover bottom of stock pot with olive oil2 lbs boneless chicken breast - cut up in pieces1 lb of whole wheat macaroni = 6 cups cookedcarrots, celery, onion, garlic - chopped (1 cup each)bayleafhotsauce (to your taste)smoked paprika or cuminchicken stock (about 1 cup)tomato sauce (1 32 oz can)Pour into casseroletop with spicy pepperjack cheese (about 1 cup)and blue cheese crumblesPut under broiler until cheese is melted
Directions
The prep and cooking time are combined on top of stove, then pour into casserole and put under broiler to melt cheese for 10 minutes or until melted
