Chocolate Mousse Peanut Butter Pie

Walnut Date Crust:2 cups of chopped walnuts1 cup of pitted datesPeanut butter Layer:1/3 of natural Peanut Butter or grind a half cup of dry roasted peanuts1 stick (1/2 cup) of salted butter1/4 cup of whole milk3 tbsp of raw honeyChocolate Layer:1/2 cup of milk1 tbsp cornstarch1 tbsp coconut oil1/4 cup of unsweetened cocoa powderSweeten to taste with honey, maple syrup or brown sugar.
Serving Size:�Makes 8 standard pie servings
In a food processor pulse the dates and walnuts together until crumbly. Press into pie pan.
Whip all ingredients for peanut butter layer in food processor. Set aside on counter.
In a saucepan over medium heat, combine milk, cornstarch, coconut oil and cocoa. Stir constantly until thick.
Place cubed tofu in a food processor. Pour slightly cooled chocolate mixture over tofu. Process until smooth. Add desired sweetener and mix until incorporated.
Layer and/or swirl peanut butter and chocolate fillings into crust as desired. Refrigerate for at least 2 hours.
Serve chilled.
