Ingredients
Garlic, 2 cloves (remove)Onions, raw, 1 medium (2-1/2" dia) (remove)Carrots, raw, 2 medium (remove)Peppers, sweet, red, raw, sliced, 1 cup (remove)Celery, raw, 1 stalk, large (11"-12" long) (remove)Zucchini, 1 cup, sliced (remove)Cabbage, fresh, 2 cup, chopped (remove)Swiss Chard, 2 cup, chopped (remove)Cauliflower, raw, 2 cup (remove)Thyme, fresh, 2 tsp (remove)Vegetable Broth, 6 cup (remove)Salt, 1 tsp (remove)Lemon juice, 2 tbsp (remove)
Directions
12 1 cup servings..

Cut up all veggies about the same size. Add all to large pot, bring to a boil, and then let simmer for about 20 minutes.

    I have used this with the Weight Watchers plan. It helps me because a cup makes me feel full, and when I add xtras I can make this a filling meal. One of my favorites is 1/2 cup brown rice and 1/4 cup white beans. I also add more of the Thyme than the recipie calls for. Peace - 4/28/10
