Whole Grain Blueberry-Oat Waffles

Ingredients
2 cups whole wheat flour1 1/2 cups old fashioned oats1/4 cup flax seed meal1 tbs baking powder3 tbs organic sucanat 1 1/2 tsp sea salt2 cups skim milk3 large eggs3/4 cup unsweetened applesauce1 1/2 tsp lemon juice1 1/2 cups fresh or thawed blueberries1/2 cup ground pecans
Directions
1. Mix together flour, oats, flax seed meal, baking powder, and sucanat.
2. In a separate bowl, mix milk, eggs, applesauce and lemon juice.
3. Pour wet ingredients into dry, and mix well.
4. Fold in blueberries and pecans, and allow to sit for 5 minutes.
5. Spray a preheated waffle baker with nonstick spray, pour batter in, and bake 5-7 minutes or until golden brown.

Serving Size: Makes 16 (4 inch) waffles
