Country Ham Bean Soup

Ingredients
2 Cups - Beans, Hurst's 15 Bean Mix1 - Meaty Ham Hock (3/4 lb)1 - 28oz can whole peeled tomatoes2 - Medium onions (chopped)1 - Large clove of garlic1 Cup potatos (Diced)1 Cup corn2 medium chicken breasts3 quarts of watersalt and pepper to taste
Directions
Soak beans 2 hours in 3 quarts of water. Add Ham Hock, bring to a boil. Lower heat to medium low, cover and cook for 2 1/2 to 3 hours, stirring occasionally. Add tomatoes, onion, celery, and garlic. Bring to a boil again and reduce heat to medium low and cook covered for additional 1 1/2 hours, stirring occasionally. Add Potatos, corn and chicken breast. Bring back to a boil. Reduce heat to medium low and cook covered for additional 1 1/2 hours, stirring every 15 minutes. Soup should be thickening slightly. Remove ham hock and chicken breasts. Carefully locate and discard bones and fat. Dice or shred the meat and return to soup. If you desire a spicier soup you may add salsa, chili powder, or tobasco.
