Buttermilk Pancakes

Ingredients
1.5 cups Self Raising Flour2 Tbsp Castor Sugar375ml Buttermilk (98% fat free)1 Tsp grated orange rind1 egg, lightly beaten1 Tbsp melted butter (Nuttelex lite)Optional1 cup Blueberriesor 1 Bananaor Grated apple
Directions
Sift floure into a bowl. Add sugar, buttermilk, egg adn margarine. Beat with a wooden spoon until batter is smooth.

Add fruit and stire to combine

Pre-heat a non-stick and oiled frying pan over a medium heat. Cook pancakes one at a time by pouring about 1/4 cup of batter into the frying pan. Cook pancakes approx 1-2min or until bubbles appear in teh uncooked batter. Then turn the packake over and cook for a further 1-2 min or until golden. Serve with fresh lemon juice or maple syrup
