Cheesy Mashed Cauliflower

8 C raw cauliflower florets (about 1 large head)4 cloves garlic, peeled1 C shredded cheddar cheese1/4 C milk1 Tb butter, cubed1 tsp dried dill weed1/4 tsp salt1/4 tsp pepper2 Tb fresh chopped chives
1. Place garlic and cauliflower in a steamer basket. Steam on medium-high heat for about 15 minutes, or until cauliflower is soft.
2. Place cauliflower, garlic, cheese, milk, butter, dill, salt, and pepper in a food processor. Process on low until creamy.
3. Stir in chives. Serve warm.
Serving Size: Makes 6 servings, about 3/4 C each
