Apple Brown Sugar Sauerkraut

Ingredients
1/2 medium sweet onion, sliced1 tablespoon butter16 ounces sauerkraut, rinsed and well drained1/2 cup unsweetened apple juice2 Tbsp brown sugar, packed1 tablespoon Dijon mustard
Directions
In small bowl, combine apple juice, mustard and brown sugar. Set aside.
In a large skillet, saute onion in butter for 15 minutes or until lightly browned. Add the sauerkraut, pour apple juice, mustard and brown sugar mixture over kraut and onion. Mix well. Bring to a simmer; cover and simmer for 10 minutes. Remove lid and reduce liquid.
Serve with Polish sausage or bratwurst, cooked separately. Serving Size: 4 servings
