Grilled Southwestern Flat Iron Steak

Ingredients
*Beef - Flat Iron Steak, 16 oz Marinade Ingredients:*Garlic (fresh, raw, 1 clove), smashed and choppedCilantro, raw, 2 tbsp chopped*Cumin, 1 tsp *Grey Poupon Dijon Mustard, 1 tsp Lime Juice, 1 lime yields *lime zest, of one limeOlive Oil, 1 tbsp (*chipolte pepper in adobo sauce, 1 serving chopped
Directions
Combine marinade ingredients in pan big enough to hold steak flat. Put steak in marinade. Turn over. Cover and refrigerate 2-6 hours.
Preheat grill to 350 degrees. Remove meat from marinade and discard remaining marinade. Grill steak on one side for 10 minutes. Turn and grill until 130 degrees for rare or 140 degrees medium... about 15 minutes. Let rest for 5 minutes before cutting against the grain.

    I made this marinade with juice from a meyer lemon and instead of chili in adobo (which I find too hot), I used a 1/2tsp of chili steak rub I had. My steak was twice the size so I will be using the leftovers for steak tacos!!! Delicious - 12/8/12
