Vegetarian Chili with Couscous

Ingredients
1 Tbsp. canola oil1 large onion, chopped1 green pepper, seeded and chopped2 cloves garlic, minced2 Tbsp. chili powder1 Tbsp. dried oregano2 tsp. ground cumin1/2 tsp. sea salt1 bay leaf1 (28 oz.)can no-salt diced tomatoes1 (14oz.)can low-fat low-sodium chicken broth14 oz. water1 (15oz.)can black beans, rinsed and drained1 (15oz.)can great northern beans, rinsed and drained1 (15oz.)can dark red kidney beans, rinsed and drained1/3 c. uncooked couscous
Directions
Heat oil in a large stockpot over medium-high heat. Add onion, green pepper, and garlic and saute for 2 minutes. Add herbs, spices and salt to pan; stir well to coat vegetables. Add tomatoes, broth, water, and beans. Bring mixture to a boil. Reduce heat and simmer uncovered for 5 minutes. Add couscous and continue to simmer uncovered for 5 more minutes. Discard bay leaf and serve.

    I made a similar recipe and it was awsome. The only difference being that you just dump everything in a crock pot but the couscous (add in the last half hour) and omit the oil. Cook for 4-5 hours. One of my favorites. - 4/11/11
