White Ground Turkey Chili

Ingredients
1 Tbl. Olive oil1 cup onion, chopped1 cup celery, chopped4 garlic cloves, minced1 lb. ground turkey or chicken3-4 (14.5 oz) cans fat free chicken broth2 (4 oz.) cans green chilis, diced2 tsp. ground cumin3 tsp. dried oregano1 tsp. cayenne pepperOptional: shredded Monterer Jack cheese, sour cream, cilantro
Directions
Heat oil in large pot over medium heat. Saute onions, celery and garlic until onions are tender.
Add chicken cook until no longer pink.
Add spices cook for 1 minute.
Add broth and green chili peppers. Bring to a boil.
Reduce heat to low and add beans. Simmer 20-30 minutes.
Serves 6 (approximately 1 1/2 cup servings).
This is pretty spicy, reduce cayenne if you don't like it too spicy. Also, you could reduce the sodium in this recipe by using homemade stock or reduced sodium broth.
