Roasted Red Pepper Spaghetti

1 tsp extra virgin olive oil1/2 small red onion1 clove garlic, minced1/4 cup roasted red pepper, about 2 or 3 halves, chopped1/2 cup fire roasted canned tomatoes1/4 tsp oregano, 1/2 tsp if using fresh1/8 tsp red pepper flake1 cup whole wheat spaghetti2 tbsp parm cheese, grated
Heat olive oil in a pan over medium. Cook onion and garlic until tender, about 8 min. Add tomatoes, salt, pepper, oregano, and pepper flakes. Reduce heat to low and simmer 10 min. While sauce simmers bring water to a boil and cook spaghetti until aldente, about 6-8 min. Drain and add pasta to skillet of sauce, toss to coat and cook an additional 2 min. Divide between two plates, sprinkle with parm and serve.
