1 1/2 C Unsweetened Applesauce2 Eggs1 t Vanilla Extract1 t Lemon Juice1 C White Flour3/4 C Wheat Flour1 t Baking Soda1 t Baking Powder1/2 t Salt1/2 C Light Sour Cream1 C Banana (Mashed)
Preheat oven to 350 degrees F. Grease a 9x5 inch loaf pan. In a large bowl, stir together applesauce, eggs, vanilla extract, and lemon juice. Combine wheat flour, white flour, baking soda, baking powder, and salt, then stir into applesauce mixture. Finally, fold in sour cream, bananas, and 1/2 cup of walnuts/pecans (optional-not inc. in nutrition information). Spread evenly into the prepared pan. Bake for 60 minutes or until a toothpick inserted in the center of the loaf comes out clean. Cool loaf in pan for 10 minutes before removing to a wire rack to cool completely. Serves 9.
