6 large Japanese Eggplants1 lb lean ground beef5 lb tomato2 pinches of cinnamon Brown pita bread
Take a glass baking pan and spray non-stick 0 calorie inside. Cut eggplants in half and place inside pan 3 per pan cutting 3rd in wedges to make it fit. Place in oven at 375 for 1 1/2 hours covered with aluminum foil until soft.
Brown ground beef and cinnamon in separate frying pan. Take eggplant out of oven lightly deflating the eggplant and adding the cinnamon beef on top evenly between both pans of 3 eggplants each. Add the 5 lbs of diced tomato evenly on top of that and place back in oven uncovered until the moisture evaporates away for the most part. Eat with 1/4 Pita Bread per serving.
