Spicy Cilantro Bean Salad

Ingredients
1/8 tsp black pepper4 Tbsp red wine vinegar1 Tbsp Olive Oil1 Clove Garlic3 tsp hot sauce1 large avocado diced1 can 12 oz white corn1 can 15 oz blackeyed peas2 small tomatoes diced2/3 cup green onion chopped2/3 cup cilantro chopped
Directions
Combine pepper, vinegar, oil, garlic and hot sauce. Add avocado and coat with liquid mixture. Stir in remaining ingredients. Serve with tortilla chips or crackers (not included in nutrition info). I eat it on rye crackers, on it's own as a side dish, or on top of my green salad. Makes 12 - 1/4 cup servings.
