Smoked Meatloaf

2 1/2 lbs of ground beef1 box of stove top stuffing
Hand mix the beef and stuffing thoroughly then shape it into a loaf onto a flat aluminum sheet without sides (so the grease runs off). The loaf should not be more than 2 inches thick at any point so that it cooks entirely. I also put one of my favorite dry rubs (Everglades or Montreal Steak typically) on the exterior for added flavor.
Smoke it (I prefer seasoned oak wood) for about 2 hours or until the internal temp is greater than 170F.
It can be simply cooked in the oven in a regular pan (preventing grease run-off) at 350 F for 1.5-2 hours until the same internal temp is achieved. This however does not provide the amazing smoked taste.
