Farmer's Breakfast

Ingredients
2 Vegetable Sausage Patties4 slices of pre-cooked bacon, chopped4 Red Potatoes, chopped0.5 c green peppers, chopped1 c. red pepper, chopped1 c. fresh spinach6 xlarge or large eggs1 c. Reduced-fat (2%) cheddar cheeseSeasonings to taste (dried onion, garlic, salt, pepper, dried parsley)
Directions
Cook potatoes to tender in microwave. Saute sausage in a saute pan sprayed with cooking spray. Add bacon. Cook 1-2 minutes, add potatoes and peppers. Add seasonings. Cook to tender. Add fresh spinach. When it is wilted, add eggs cook until nearly done, add cheese. Serve when melted.
