Ingredients

    Evaporated Skim Milk, 125 grams
    Garlic, 1 clove
    Parsley, finely chopped, 1 tbsp
    Chicken Breast, no skin, 8 oz (one large chicken breast)
    Mushrooms, fresh 1/2 cup whole sliced
    Ronzoni Penne Rigate, 4 oz unkooked
    Broccoli, cooked, 170 grams
    Reduced Fat Grated Parmesan Cheese, 2 tsp

Directions

Cook pasta according to directions, grill chicken breast and cook broccoli until 'al dente'. Cut the grilled chicken breast into thin strips.
Sautee the mushrooms in a non-stick pan until done.
Combine evaporated milk, garlic, parsley and parmesan cheese. Bring sauce to a boil and let simmer for 5-8 minutes, stirring frequently.
Drain pasta and return to pot, add the broccoli and mushrooms, then the sauce. Stir until all is combined and divide into equal portions. Place chicken strips on top. Enjoy!

    Very Good
    I really enjoyed this and would definitely make it again! The sauce was a bit bland for my taste, so I modified it a bit and added vidalia onion, extra garlic and black pepper. I sauteed the onion and garlic before adding to the sauce. - 5/27/08

    pretty tasty and really fast to make if all items needed are already prepared (defrosted and chopped). i didnt use garlic in my sauce but it still came out pretty ok. i dont think you can consider my sauce a sauce (was pretty chunky) so some advice/ suggestions needed (please) to make creamy - 4/22/08
