Cucumber Fennel Herb Salad

Ingredients
1/3 cup yogurt low fat2 Tbs fresh dill, chopped1 Tbs fresh parsley, chopped2 1/2 Tbs lemon juice1 1/2 Tbs olive or grape seed oil1 1/2 fresh mint, chopped2 1/2 tsp brown mustard1/4 tsp sugar1/4 tsp salt1/4 tsp black pepper1 clove garlic, minced2 large cucumbers, thinly sliced lengthwise like ribbons1 fennel bulb thinly sliced1 small red onion, cut in half, thinly sliced
Directions
In a food processor, process together yogurt, dill, parsley, lemon juice, oil, mint, mustard, sugar, salt, pepper, and garlic (first 11 ingredients) until well blended.
In large bowl, combine cucumber, fennel, and onion.
Add yogurt dressing and toss to coat well.
