Thai Turkey Stir Fry (Low Fat)

Ingredients
500g turkey mince (lean)2.5 cups of shredded red cabbage 1 grated carrot1 finely chopped onion2 crushed garlic cloves2 tsp- tbsp grated ginger root (easier to do if frozen)1 tbs fish sauce2 tsp sugar2 tbs soy sauce (light)50g vermicelli noodlesjuice and grated rind of 1 limegood healthy bunch of coriander
Directions
Oil in pan
saute onions, add turkey and brown
Mix sauce on side (garlic, ginger, lime, fish sauce, sugar, soy sauce)
Add carrot & cabbage
When just wlted, add sauce
Make Vermicelli on side as per packet instructions
Just before taking off meat, add coriander and vermicellil noodles

Serving Size: Makes 4 servings - can make more vermicelli
