sugar-free vanilla meringue cookies

½ cup liquid egg whites (or 3 egg whites)¼ tsp Cream of Tartar½ tsp Vanilla Extract2 Tbsp Truvia(Optional: Cinnamon, Cocoa Powder)
Egg whites need to be at room temp.
Preheat oven to 225'
Whip egg whites until soft peaks form. Continue beating, slowly adding in cream of tartar, vanilla, and sweetener. Beat until stiff peaks form.
Line a cookie sheet with parchment paper. Dollop spoonfuls of meringue onto parchment.
Sprinkle with cocoa powder or cinnamon if desired.
Bake for 25 minutes, rotate cookie sheet, bake for another 20-30 minutes (depending on size of cookie).
Let cool - store in an airtight container (if they last that long).
