pumpkin protein muffins

4 egg whites1 cup canned pumpkin2/3 cup dry powdered milk6 tbsp whole wheat flour6 scoops vanilla whey protein powder1 tsp baking soda8 packages (more or less) of splenda2 tsp cinnamon1 tsp Pumpkin Pie Spice3/4 cup grated carrots1/2 cup raisins
Beat eggs, then add pumpkin and carrots stirring until well blended. In separate bowl stir together dry ingredients including raisins. Slowly add the dry ingredients to the pumpkin mixture and mix well. Pour batter evenly into muffin tins lightly sprayed with vegatable spray. Bake at 350 degrees approx. 20 minutes. Makes 12 muffins. Nutritional information is based on one muffin, but two muffins is comparable to one protein bar.
