Ingredients
Directions
1 medium-sized (any size really) sweet potato1 tbsp apple butter1 tbsp maple syrup
Wash the sweet potato well with warm water and soap, preferably using a scrub brush but a rubdown will do.
Poke the potato 3-5 times with a knife and microwave on HIGH for 2-3 minutes (depending on the size, if it's larger, then 3 minutes; smaller, then 2).
Flip it, place the top side down and microwave on HIGH for another 90 seconds.
Being careful not to cut (or burn) yourself, cut the potato in half vertically (aka hotdog bun style, not hamburger bun) and, with a fork, mash the insides of both sides.
Pour the 1 tbsp of both the syrup and the butter on either half.
Enjoy! :)
Serving Size: makes 2 servings as a side dish/snack or 1 as breakfast
