2 chicken skinless boneless chicken breasts, cubed1 cup brown rice, medium grain3 cups chicken stock8 oz low-fat cream cheese1/4 cup unsalted butter2 cups 2% milk1 cup Mexican Four cheese blendSalt and pepper to taste
Cook chicken and set aside. Bring chicken stock to a boil, add rice, cover and simmer until done. In a medium sauce pan, melt butter and cream cheese, then stir in cheese. Season with salt and pepper to taste.
