Rhubarb Cake

1+1/3 cup flour3/4 cup sugar3 tsp baking powder1/4 tsp salt1/4 cup butter1 egg3/4 cup milk1 tsp vanilla--------------------------------------1.5 cups diced rhubarb 3 tsp granulated sugar--------------------------------------1/4 cup flour6 tsp sugar2 tablespoons butter
1) Preheat the oven to 350 'F. Spray a 9 inch round cake pan with cooking spray. Set aside.
2) In a large bowl, combine from the first list, the flour, sugar, baking powder, and salt. Cut in the butter using a pastry cutter.
3) In a smaller bowl, combine the egg, milk and vanilla.
4) Mix the milk mixture into the flour mixture. Stir just until blended.
Place the cake mixture into the prepared pan.
5) Mix the diced rhubarb with the 3 tsp sugar. Sprinkle on top of the cake batter. Swirl carefully into the batter.
6) In a medium sized bowl, mix the flour and sugar. Cut in the butter, and mix with a pastry cutter until crumbly.
7) Sprinkle the crumbs evenly on top of the cake.
8) Bake the cake at 350 'F for about 50 minutes, or until it is done when checked with a pick. (no batter should be on the pick.)
9) Carefully remove from the pan and cool on a wire rack. (Slices into 12 even sized servings.)
