Tomato Baked Walleye

1 onion, sliced thin2 Tbsp olive oil1 1/2 lbs walleye fillet1 1/2 cups fresh mushrooms, sliced1/3 cup white wine1/2 tsp salt1/8 tsp pepper1/8 tsp garlic powder1 large ripe tomato, sliced thin1/2 tsp oregano leaves2 Tbsp fresh snipped parsley
Cut onion into thin slices and separate into rings. In 9-inch skillet, cook and stir onion in olive oil over medium heat until tender-crisp, about 5 minutes. Set aside.
Heat oven to 350 degrees. Place fish in a 13 x 9-inch baking pan. Top with onion rings. Sprinkle mushrooms over onions. Set aside.
In small bowl, combine tomatoes, wine, salt, pepper and garlic powder. Spoon evenly over fish and vegetables. Top with tomato slices. Sprinkle oregano and parsley over tomato. Bake until fish flakes easily at thickest part, 25 to 30 minutes.
