Ingredients
Directions
2 cups almonds1/4 cup ground flax seeds1/2 cup dried prunes, dates or raisins (i used dates)˝ cup shredded coconut (unsweetened)˝ cup unsalted almond butter˝ teaspoon sea salt˝ cup coconut oil (you can use extra light tasting olive oil here, but I used coconut)1 Tbsp maple syrup or honey 2-3 teaspoons vanilla extracta few squares dark chocolate, less than half a bar needed for thin layer – I melted about 1/4 bag of chocolate chips in the microwave
1/2 all above ingredients or use a 8X8 dish.
Place almonds in blender, pulse to grind.
Add flax seeds, coconut, almond butter, salt, coconut oil, maple and vanilla and pulse (I melted oil and almond butter in the microwave for 20 seconds before adding)
Press mixture into tupperware.
Heat chocolate chips in microwave (20 seconds and stir, 20 sec and stir, etc.)
Spread chocolate over bars and pop lid on and put in the freezer for about 20 minutes.
Take out of freezer, run a butter knife around the edge, turn out, slice up and and stick back in the fridge until you're ready to eat.
Top with whip cream and oh no! It's a dessert!
Serving Size: makes 16 squares
