Zucchini-Spinach Fritter

Ingredients
Zucchini, 2 cups, shreddedSpinach, frozen, 2 cupsExtra Virgin Olive Oil, 6 tbsp (for browning)Bread crumbs, dry, grated, plain, 1 cupChili powder, 3 tbspCumin seed, 3 tbspCoriander seed, 2 tbspCurry powder, 2 tbspGround tumeric, 2 tbspGarlic powder, 1 tbsp
Directions
Mix all ingreadients except olive oil. Using a standard large table spoon, combine 2 spoon-fulls into paddies. Should make approximately 10 paddies. Brown in olive oil. If needed, finish in oven.

Makes 10 paddies; 1 serving = 1 paddie
