Blender Gazpacho

Ingredients
1.5 cups roasted red peppers, coarsely chopped1 english cucumber, cut into 1 inch pieces4 beefsteak tomatoes, quartered2 tbsp. red wine vinegar2 tbsp. olive oil1 clove garlic3 slices rustic white bread, crusts removed, to equal 1 cup in small pieces3/4 cup cold water
Directions
Mix bread, water, garlic, vinegar in bowl. Add to blender along with cuke. Puree. Add to large bowl.
Add half the tomatoes to blender, puree. Add to bowl.
Add remaining tomatoes to blender and puree, gradually adding olive oil.
Add to bowl, chill at least 1/2 hour.
