Shrimp Soft Tacos

Ingredients
2 tsp sunflower oil1 medium onion, diced1 lb shelled raw shrimp, chopped2 medium green or yellow bell peppers, diced1/8 tsp ground black pepper1/4 tsp ground coriander1 lime, juice of2 medium tomatoes, diced4 oz grated colby cheese4 6" flour tortillas(optional addition: 1 Tblsp sour cream per serving is not included in nutrition information)
Directions
Cut veggies and grate cheese. Heat oil in skillet. Add onions and shrimp to hot oil to cook for 2 minutes. Add bell pepper, black pepper, coriander and lime juice. Cook until shrimp is done.

Put 1/4 of shrimp mixture on each of 4 flout tortillas. Top each with 1/2 tomato, chopped and 1 oz of grated colby. Fold tortilla in half and eat like a soft taco.

May also add a Tblsp of sour cream which should be added to your food list.
