Stuffed Zucchini Boats

Ingredients

Zucchini, medium size, 10 inches long, 7 ozGround beef, lean, 8 oz Garlic, 3 cloves Olive Oil, 2 tsp separted *Onion powder, 1 tsp Garlic powder, 1 tsp Oregano, ground, 1 tsp Basil, 1 tbsp Salt, 1 dash Pepper, black, 1 tsp Parmesan Cheese, grated, .5 cup save 1 tbsp for topOnions, raw, .25 cup, chopped 1 egg1 tsp butter
Preheat oven to 350
Cut Zucchini in half, long way.
Scoop out center with spoon set aside for later use.
Once "boat" is made, spritz with olive oil 1 tsp, Salt/Pepper to taste
Place in over in glass dish to roast, while making stuffing.
Dice up scooped zuccihini
dice onion
smash and dice garlic
place in frying pan with tsp olive oil and tsp butter
Saute until onion/garlic turn golden brown
create meat mixure
add dry spices to ground beef onion, garlic, basil, oregano, cheese (reserve 1 tbsp for topping later)
add egg, mix together like meatballs/loaf
Add zucchini, onion/garlic mixture to meat, mix throughly.
Split mixture in half.
Remove zucchini boats from oven, fill hollowed out boats with mixture. Top with remaining grated cheese.
Bake in oven for 30 minutes.
