Spicey Loquat Chicken

Canola oil cooking spray1/2 cup brown rice1 cup water1/2 large onion chopped2 stalks celery chopped2 carrots chopped300 grams (one large) skinless chicken breast4 Tbl loquat sauce (see my recipe)1/4 tsp ground ginger (my jam already has ginger so I don't add this)2 tsp tamari soy sauce2 dashes sriracha chili sauce (optional)
To Prepare brown rice: bring rice to boil in water. Then reduce heat to simmer, cover and cook on low for one hour.
Preheat oven to 350 degrees.
Meanwhile saute onion, celery, and carrots until onion starts to become transparent.
Then put semi raw sauted vegetables into casserol dish.
Use same frying pan to brown chicken breast.
In small bowl, stir jam, tamari, and hot chili sauce.
Place browned chicken on top of vegetables.
Spread 2/3 of sauce on chicken breasts.
Cover with lid or foil and bake for 20 minutes.
Remove cover and bake 10 more minutes.
Serve Loquat Chicken over rice.
Spread more sauce on chicken before serving or serve with extra sauce at the table as condiment.
