Vegan Peach Brown Sugar Muffins

2.5 cups of spelt flour0.5 cup of brown sugar2 tsp baking powder1 tsp baking soda0.25 tsp salt1 cup rice dream1 Tbsp lemon juice0.33 cup oil1 tsp vanilla extract1 cup peaches fresh or canned
Preheat oven to 400F
Line muffin tins with muffin cups.
Mix wet ingredients and brown sugar together.
Mix in dry ingredients and fold in peaches.
Spoon into muffin tins and bake for 18-22 minutes.
Should be lightly browned and centers should spring back lightly when touched.
Pecans can be added for more calories if you like.
Bake at 400 for 18-22 minutes.
