Vegetable and Barley Soup

Ingredients
2 Sticks celery2 Large carrotsSome finely shredded green cabbage1 Large leek1 Small turnip2 Large onions1 tbs Olive oil2tbs Pot Barley, well washed & soaked overnight1.5 pints (1 litre) Vegetable StockBlack pepper1 Bayleaf1tbs Parsley, chopped (fresh or dried)
Directions
Clean and chop the vegetables, using celery leaves as well as the stalks. Chop one onion and a little of the celery and leek very finely, and soften in a large pan. Add all the other ingredients. Bring to the boil, stirring well, and allow to simmer covered until all the vegetables are soft - about 45 minutes. Serve sprinkled with parsley.
