1/2 chicken breast1/4 c. canned black beans2 c. shredded or torn romaine lettuce2 tbs. homemade salsa (lowers the sodium in this recipe)4-5 strips of yellow and red bell pepper1 slice tomato1 tsp. olive oil1 slice of onion1 tsp. of ground cumin1 tsp. of onion powder1 tsp. of chili powder5 homemade corn tortilla chips (optional)2 tbs. reduced fat ranch dressing (optional)
Coat chicken breast strips in one teaspoon olive oil and spices. Grill chicken in grill pan until cooked through. Place salad ingredients in bowl and top with chicken strips, black beans (rinsed) and salsa. Serve with homemade corn tortilla chips (optional).
