Salmon Patties

Ingredients
4 cans pink salmon (213 g each)5 large eggs3 large scallions5 cloves garlic3/4 cup fresh dill weed2 tbsp olive oil
Directions
Drain each can and remove all skin and bones from salmon, then proceed to flake the fish using a fork. To the flaked fish add 3 chopped scallions, 5 cloves of minced garlic and 3/4 cup of chopped dill weed. In a separate bowl mix 5 eggs and pour into the fish mixture. Stir all the ingredients together. Form small patties (2.5' x 1.5' ). The mixture should yield roughly 30 patties. Spray a non stick pan with olive oil and fry until golden on each side.
