Creamy Dill Flounder

Ingredients
2 shallots2 tbsp butter, divided3/4 cup vermouth1/2 cup fresh dill1/2 cup Land O' Lakes low fat Half & half1/4 cup fresh grated parmesan cheesesalt & pepper to taste2 lbs flounder
Directions
saute shallots in 1 tbsp butter, add vermouth and cook for 2 minutes. Add dill, half & half and parmesan. Remove sauce from pan, scraping well. Add 1 tbsp butter and fish. Cook 3 minutes and carefully flip over. Cook on other side a few more minutes until cooked through. Pour reserved sauce over fish in pan.

    Loved it. Last minute decision, so I didn't have all the ingredients. Substituted about a teaspon or so of dried dill for the fresh and used soy milk in place of the half & half. Prepared the sauce in a small pot and cooked the fish on a griddle with just butter spray. Yummy. - 3/28/11
