Gai Pad Gra Pow (Thai Basil Chicken)

1/2 pound of chicken, minced or cut into bite sized pieces if you preferOne to two packages of Thai holy basil (gra pow), be very generous as this is the key ingredient. Normal sweet basil can also be used, but this changes the taste.4-7 small Thai chili peppers, minced (other peppers can also be used, but again, this will change the flavor)1 tablespoon sugar (palm is best, but granulated if you have no choice)1 tablespoon minced garlic3 tablespoons fish sauce1 tablespoon vegetable oil
1. Mince garlic and chili pepper
2. Clean and pick basil leaves from their stem.
3. Fry the garlic and chili pepper in oil over high heat.
4. When garlic starts to turn brown, drop the chicken in, stirring constantly. Keep stirring until all the juice from the meat evaporates.
5. Add the sugar, fish sauce and basil.
6. Mix quickly and well, remove from the fire.
7. Serve hot with sticky rice and fish sauce with chopped peppers in it.
