Maple Baked Custard

Ingredients
2 eggs1C skim milk or soy milk2 T maple syrup 1/2 t vanillaground nutmegCombine eggs, milk, maple syrup and vanilla.Wisk until smooth. Pour into 3 glass custard cups. sprinkle with nutmeg.
Directions
Place cups on rack or upside down heatproof dish in a pan with fitted lid. Pour 1 inch of water into pan, cover and bring to rolling boil.
Remove from heat and let stand, do NOT lift lid for15 minutes.
Serve warm or cold...makes 3-4oz servings
