Lentil Soup

10oz Lentils4oz Leeks, white part only, washed and minced4oz celery, washed and minced4oz carrots, washed and minced1 onion studded with a clove1 bay leafSalt and freshly ground pepper4 Strasbourg sausages (high-quality hot dogs)2 tbsp butter2 tbsp flour
1. Pour the lentils in a stockpot and add 3 quarts water. Bring to a boil.
2. Add all the vegetables and seasonings. Cook for 1 hour.
3. At the end of the cooking time, slice the sausages into thick pieces and saute in 1 tablespoon of the butter. Add to the lentils. Melt the remaining 1 tablespoon butter with the flour and add to the soup to thicken. Taste and correct the seasoning before serving.
( To make healthier try a different sausage made from chicken or the like)
