Chicken Cacciatori

Ingredients
3 Chicken thigh fillet, bite size chunks/ slices1.5 cup puree tomato (passata)7 Black olives1 sliced onion 5 button mushrooms quarteredoregano bay leaf1 clove garlic crushed
Directions
brown off chicken with garlic in oil
Add onions and saute
Add olives, mushroomos and herbs, cook for 3min
Add tomato puree and simmer for 15min to reduce
add salt/pepper to taste
