Easy, healthy Crock Pot Chicken Quesedillas

1- 1.25 lb frozen boneless chicken breast1 can black beans1 jar salsa (any)1 package Taco seasoning1 cup frozen cornAdditional (not included in nutritional info) -- tortillas, cooking spray, optional cheese and/or sour cream
combine all ingredients in your slow cooker; cook on low for 6 hours (or until chicken is fork-tender). Shred chicken with fork before serving.
This filling makes a great taco, nacho, or quesedilla. My favorite option is to take a tortilla, fill it with a few tablespoons of filling and some cheese, and brown gently in a no-stick frying pan to crisp it up. Then I dip it in reduced fat sour cream. It is amazing, and this recipe makes a TON of filling.
