Rice n' beans n' greens

Ingredients
Cook rice and set aside in a medium to large bowl . Sauté greens in 1 Tbl of olive oil until cooked (they’ll look wilted). Turn heat to low. Add soy sauce (or Bragg’s), cumin and red pepper to the greens. Cook for one more minute. Add greens to rice.Reheat sauté pan and cook chopped leek with 1 Tbl of olive oil until most pieces of the leek are transparent and browned. Add to the greens.Add beans and lemon juice to the mixture, and combine. Salt and pepper to taste. Serve immediately.
