Vegan Chocolate Chip Cookies

1 cup vegan margarine1 cup evaporated cane sugar1 cup brown sugar, packed1 tbsp vanilla extract4 tsp baking powder4 tbsp water2 tbsp vegetable oil1/2 tsp sea salt3 cups unbleached flour1 tsp baking soda1 1/2 cups carob chips
Preheat oven to 350 F.
Blend together the softened margarine, sugar, brown sugar, and vanilla extract until smooth. Next, combine the baking powder, warm water, and oil in a separate cup and mix until gelatinous (this is the egg substitute), then add together with the flour, salt, and baking soda. Blend until even and smooth. Finally, add the carob chips and work them into the cookie dough.
Make balls approximately 1-1.5 in. in diameter using a table spoon as an measure. Round the balls out and bake for 12 minutes, or until golden brown.
Serving Size: Makes approximately 48 medium-sized cookies.
