Ingredients
8 corn tortillas8 eggs, XL12 oz, Mexican Chorizo such as Chorizo de San Manuel(Edinburg, TX)
Directions
Cook the Chorizo in a pan first on low heat, breaking up the chorizo. Add the eggs, and continue to cook until the eggs are cooked. Warm the tortillas and you DONE!

    Being from Mission Texas, I have used San Manuel chorizo forever so glad that we have it here in Waco. It's the best chorizo. Simple recipe but the chorizo tacos are great with San Manuel chorizo of course. - 1/3/13
