Baked Garlic Lemon Chicken

Ingredients
2 boneless skinless chicken breast halves2-3 tbs fresh squeezed lemon juice2 tsp lemon zest3 cloves garlic, minced1tbsp fresh thyme1 tbsp Extra Virgin Olive Oilsalt and pepper
Directions
Preheat oven to 400°Mix lemon juice, zest, garlic, thyme and olive oil in a small bowl. Trim any fat off of chicken. Spray a small covered baking dish with a little bit of cooking spray. Rinse and pat chicken dry. Season with salt and pepper. Lay in baking dish. Pour lemon juice mixture over the top, using a fork to spread out the garlic and thyme to cover chicken. Cover and bake for 30-40 minutes or until done.
