Tabbouleh Salad with avocado

Ingredients
Parsley, flat-leafed - 2 cups Mint - 1 cup2 tomatoes diced1/2 long English cucumber diced4 spring onions (scallions) sliced1 avocado - dicedDressing:1/4 cup lemon juice1 Tbsp. extra virgin olive oil2 tsp. garlic (minced)salt & pepper to tasteBulgur (dry cracked wheat) - 1/4 cupWater - 1 cup
Directions
Add the bulgur to water in pan and heat to boiling. Turn off heat and let sit for about 1/2 hour until all the water is absorbed. Fluff it up with a fork.
Combine the lemon juice, olive oil, garlic and salt and pepper.
Dice the tomato, cucumber and avocado
Chop the parsley and mint
Add all the ingredients together and toss.
