Summer Quinoa Salad

Ingredients
2 C water1 C dry quinoa1 T olive oil1/2 tsp saltzest and juice of 1 lemon24 grape tomatoes, halved1 cucumber, peeled and chopped1/2 bunch green onion, chopped1 C shredded carrot1 bunch flat leaf parsley, chopped
Directions
Bring water to a boil. Add quinoa and reduce heat to low. Cover pot and simmer 15 minutes. Allow quinoa to cool. In a large bowl combine quinoa, tomatoes, cucumber,, green onion, carrots and parsley. Mix together oil, lemon juice and salt and drizzle over salad. Toss to coat salad. Chill until ready to serve.
